- Our brand, Aux Délices des Bois, took on a new life as we morphed from the wild mushroom and truffle business to our first branded product, Black Truffle Butter. The pig that hustles fresh truffles in the forest stayed on the label for our other products: spiced bacons, charcuterie, and fresh pork sausage.We produce Whole Foods exclusive Chestnut Valley meat products, Chestnut Valley Charcuterie and Chestnut Valley Fresh Artisan Sausage (fresh).Aux Délices des Bois and Chestnut Valley recipes honor the old pork store guys who spent a lifetime showing our charcutier Charles Ventre how to make sausage. His updated flavor notes, however, are anything but old fashioned. Youll taste unusual twists, such as fennel pollen, juniper berry, and pimentón. The fresh sausage puts some spin on tradition, too. Hey, what 1920s butcher brewed up Brooklyn Lager in his Brats? Real diced bacon in its Breakfast Sausage?
