- CH Distillery opened in Chicagos renowned West Loop neighborhood (564 West Randolph) in August 2013, as the citys first distillery with a cocktail bar. Celebrating the science of making spirits, CH takes its name from Carbon and Hydrogen, the fundamental compounds in alcohol, while also paying tribute to Chicagos local community. Founded by spirits enthusiasts Tremaine Atkinson and Mark Lucas, CH Distillery is a truly local grain-to-bottle operation, producing vodka, gin and other spirits from ingredients grown just 50 miles outside Chicago. CHs cocktail bar takes spirit-driven cocktails to a new level. The distillery produces custom liquors, allowing food and beverage director Krissy Schutte unlimited freedom to create unique flavor profiles. The food menu, by executive chef Bobby Mayo (Kinmont, Avec) pairs playful, yet authentic Northern and Eastern European flavors with spirits and cocktails. Inspired by the beautiful factory aesthetic of the distillery, Chicago architects Sullivan, Goulette & Wilson present a modern, yet warm design concept using industrial textures and materials such as concrete, stainless steel, glass, stone and reclaimed wood.CH signature spirits include: Vodka, Key Gin and London Dry Gin. Other CH spirits: Giulianas Handmade Limoncello, Amaro, Aquavit, Peppercorn Vodka, Cherry Brandy, Whiskey, Rum, and Bourbon.
