Its a demonstrably scalable process that removes certain undesirable congeners while, like the barrel, converting others to produce a better taste profile. The result is a purer, smoother spirit produced more efficiently. Conventional distillation and barreling cost more and more everyday. In striving to deliver a smoother and better tasting spirit, distillers are locked into an old, inefficient system of removing impurities and the barrel is working harder and longer to deliver a smoother spirit. PERSEDO PROCESS BASICS Persedo takes a multi-stage approach to re-profiling and improving the taste and aroma of a distilled spirit. The process offers a tool to reach deeply into the beverage and refine it at the molecular level. The processing differs significantly for vodka, rum, tequila and unaged or aged whiskey, but the basic building blocks are the same. While performing reduced pressure distillation, we control 7 process parameters and remove selected microencapsulated congeners and convert other selected compounds. This process is adjusted for the type of spirit, but is constant in its effectiveness and results. Our patented technology is a unique process which achieves optimal taste and flavor profiles in distilled spirits. First - our system breaks mixtures of undesirable flavor compounds, which are otherwise inseparable by standard distillation. For the first time ever, the Persedo process separates oily compounds from the mixture, encapsulates and removes them with bubbles in the solution. Our system removes compounds that would otherwise remain after traditional distillation. Second - the Persedo process uses a hybrid reduced pressure distillation and microencapsulation of congeners to gently extract undesirable compounds from a spirit, while simultaneously breaking oily emulsions. At near ambient temperature, alcohol losses are minimal and heat damage to delicate components is eliminated. At the same time, harsh tasting components like fusel oils are ejected and certain undesirable components such as fatty acids are converted to form esters while other off flavors are similarly converted. The result - is spirits with an extraordinary taste and aroma that cannot be matched by conventional distillation or aging techniques. Our beverage profile testing indicates that offensive fatty acids in whiskies, tequilas and rums are converted to their corresponding pleasantly appealing flavor esters, thereby reducing the time required in a barrel. Again, the conditions and steps used depend very much on the nature of the beverage and the desired changes, but the fundamental process is the same.
